Saturday Morning French Toast

Stumbling home the other night John discovered Sarcone's dumpster. Ahhh, nothin's better then the sweet smell of fresh from the dumpster free baguettes.
To start a perfect weekend: serve with coffee, fresh fruit and eat with loved ones.

Freegan French Toast

-1 large Baguette - sliced - an inch thick
-1/2 cup Earth Balance
-1 cup almond milk
-1 tsp. nutmeg
-1/2 tsp. cinnamon
-fresh berries to your liking
-dash of powdered sugar (optional)

In a small sauce pan melt the earth balance on low heat. Add the almond milk, nutmeg and cinnamon. Mix together and remove from heat just as all the earth balance has melted. Pour into a small bowl.  Put on fry pan and get it nice and warm...
Dip a slice of bread very lightly (if you totally dunk it you're going to end up with soggy toast...eww...) into mixture and throw onto already hot pan. Cook for about 1 - 2 minute on each side (the more saturated the slice the longer it'll need to be on there). When each side is lightly browned and crisp, they're ready to come off.
Serve right out of the pan with fresh berries, a dash of powered sugar and syrup!

Who knew a perfect start to the weekend could be so sweet and easy....

Back to Life, Back to Reality, Back to Philly

I was away in Alaska for the summer (hence the lack of blog entries). Endless days, kayaking, mountains, ocean, seastars, and not a vegan restaurant in sight. No, there is one restaurant in the Anchorage area (not in the Homer area where I was stationed) that I must give credit to - The Middle Way Cafe. The best vegan cupcakes under the sun. And 2 - that's right 2 vegan options on their menu (only breakfast - lunch you're stuck with a bowl of soup) but for Anchorage that's HUGE! So kudos to Middle Way. If you ever venture up north - Check them out! 1200 Northern Lights Blvd.

Coming back to Philly greeted me with humidity, uncontrolable sweating and no job. After craigslisting and what not I landed a position at whole foods (which will definitely lend a hand in my cooking/baking field)! I've been lacking in the kitchen since I've been back because it makes me sick just thinking about turning on a stove or oven - and I wasn't doing so great in the blog world before I left. So my goal this fall is to make lots of yummy things, and share it with you - my loyal readers. (is anybody out there?)
